0Expat Comfort Food: Copycat KFC Coleslaw
Sometimes…
A girl just needs a little taste of her native land.
Though (happily) Ecuador has managed to somehow exist (just fine) without a Starbucks, we actually do have a KFC here in Cuenca (along with a MacDonald’s which I’ve never entered).
The KFC is in the mall which (given that I *loathe* shopping malls) I’ve visited exactly 3 times in the 3+ years I’ve lived here. But you can bet whenever I do brave the zombie ugh of the mall, I do.not.depart. without a piece of crispy KFC “pollo frito” and a side of that incredible tangy coleslaw.
Nonetheless, it’s fun to toss together my own, at home in my sweet little apartment amid the cobbled streets of El Centro. So easy, and so yummy – and reminds me of my native land.
Copycat KFC Coleslaw
Sometimes… a girl just needs a taste of her native land.

Finely chop the cabbage and onion, and grate the carrot into a large bowl. Add the salt and pepper, and toss together.
In a small bowl, mix the mayonnaise, sugar, milk, buttermilk, lemon juice and vinegar. Pour mix over cabbage and toss well.
Tip: You can make your own buttermilk simply by adding 1/4 tbsp of white vinegar or lemon juice to 1/4 cup of milk. Stir, then let stand for 5 minutes.
Allow the slaw to sit awhile to blend flavors. Add a bit more sugar and/or lemon juice to taste.
A most yummerish taste of the U.S. of A!
